Wow, these pancakes are an absolute dream…served with caramelized maple banana, ice cream and maple syrup! Also delicious with caramelized peaches, apples or served with fresh berries and nuts.

Instructions

  1. Preheat the oven to 230C and place a 9 inch skillet with the oil in the oven while mixing the pancake ingredients.
  2. In a bowl whisk all the ingredients together and pour into the hot skillet.
  3. Meanwhile start preparing the caramelized banana. Set a frying pan on medium heat with the butter, let it melt and slightly brown then add the maple syrup. Let it come to a boiling point then add the sliced banana and brown both sides.
  4. When the pancake has risen and golden brown, remove from the oven and serve with ice cream, caramelized banana and maple.
