Roasted Sweet Potato with Maple Syrup Recipe
These delicious sweet potatoes and pancetta, roasted in maple syrup bring an exciting new accompaniment to the dinner table.
2 large sweet potatoes
1 small red onion
1 tbsp Pure Maple Syrup (Canada Grade A Delicate Taste)
splash of balsamic vinegar
a few sprigs of fresh thyme
olive oil for roasting
salt and pepper to taste
Preheat the oven to 220C (200C for fan ovens).
Peel and cut the sweet potatoes into 2cm chunks.
Chop a red onion to similar size chunks.
In a large bowl, add the potatoes, onion and pancetta. Add the maple syrup, a splash of balsamic vinegar and combine well.
Oil a large baking tray and evenly distribute the vegetables. Sprinkle a few sprigs of thyme and season with salt and pepper.
Roast in the oven for about 30 minutes, turning halfway through. Cook until the sweet potatoes are tender.
