Maple Roasted Carrots Recipe

This lovely recipe is from my good friend Durda. The maple syrup added to these heirloom carrots adds a whole new dimension to this dish.


450g heirloom carrots

30ml Pure Maple Syrup, Golden Delicate

olive oil for roasting

rock salt to taste

a few sprigs of thyme


Preheat the oven to 220C. Line a roasting tin with parchment paper.

Take the tops off the carrots and wash them well, no need to peel them. Dry the carrots with paper towel.

Place the washed carrots in the roasting tin and coat well with olive oil, add the sprigs of thyme and salt.

Roast in the oven for 20 minutes or until carrots are tender.

While still in the tin, pour the maple syrup over the carrots and cover with the parchment paper for 2 – 3 minutes before serving.

Very simple and so delicious!
