Roasted Carrots with Maple Syrup Recipe

Looking for a delicious and healthy side dish to add to your dinner tonight? Try these Maple Roasted Carrots! They’re perfect served with a summer barbecue or delicious with a roast dinner.
- 450g baby carrots
- Olive oil for roasting
- A few sprigs of thyme
- Salt to taste
- 2 tablespoons Pure Maple Syrup, Golden Delicate
- Preheat the oven to 200C, fan 180C or gas mark 6. Line a baking tray with parchment paper.
- Take the tops off the carrots and wash them well (no need to peel them). Place dried carrots on the baking tray and drizzle with olive oil, add salt and the thyme. Then place the tray in the oven and cook for 20 minutes. Add the maple syrup to the carrots, coating them well and return them to the oven for 5 – 10 minutes until tender.
