Roasted Carrots with Maple Syrup Recipe

This lovely recipe is from my good friend Durda. It’s perfect served with a summer barbecue or delicious with a roast dinner. The maple syrup works so well with the sweetness of the carrots.
- 450g baby carrots
- Olive oil for roasting
- A few sprigs of thyme
- Rock salt to taste
- 30ml Pure Maple Syrup, Golden Delicate
- Preheat the oven to 220C, fan 200C or gas mark 7. Line a baking tray with parchment paper.
- Take the tops off the carrots and wash them well (no need to peel them). Place dried carrots on the baking tray and drizzle with olive oil, add salt and the thyme. Then place the tray in the oven and cook for 20 minutes or until tender. Pour the maple syrup over the carrots and cover with the parchment paper for 2 – 3 minutes before serving.
