Our delicious chocolate chip banana and nut muffins are so simple to make. Perfect for when you have a couple of spotty bananas left in the fruit bowl. They make a lovely treat for breakfast or a yummy snack with a coffee. They take minutes to make and you know exactly what’s in them.
Ingredients
- 2 ripe bananas
- 120ml oat milk
- 120ml vegetable oil
- 180g Pure Maple Syrup, Amber Rich
- 2 teaspoons vanilla extract
- 240g plain flour
- 1 1/2 teaspoon baking soda
- Pinch salt
- 150g chocolate chips, vegan friendly
- 150g walnuts
Instructions
- Preheat the oven to 180C, fan 160C or gas mark 4 and line a 12 hole muffin tin.
- Place the bananas in a mixing bowl and mash them with the whisk attachment. Add all the wet ingredients and whisk to combine.
Add the dry ingredients to the wet mixture and mix to combine well. Spoon into the muffin tin and bake on the middle shelf of the oven for 20 minutes or until an inserted toothpick comes out clean.
- Cool on a wire rack for about 10 minutes before removing from the muffin tin.
