Baked Oats with Peanut Butter and Chocolate Chips Recipe

Hearty, nourishing, and lightly sweet, these Baked Oats with Peanut Butter and Chocolate Chips make a wholesome breakfast that’s as satisfying as it is delicious.

Serves: 2

Ingredients

  • Knob of butter

  • 3 tbsp Pure Maple Syrup, Amber Rich, plus extra to drizzle
  • 2 tbsp peanut butter or other nut butter of your choice
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 5 tbsp milk or yogurt
  • 75g jumbo oats
  • Pinch of cinnamon (optional)
  • ½ tsp baking powder
  • 2 tbsp dark chocolate chips
  • Banana and extra nut butter to serve, if you like

Instructions

  1. Preheat the oven to 190°C/170°C fan/Gas Mark 5.
  2. Butter two small oven proof dishes or one medium sized dish and place on a baking tray.
  3. Add the Amber Rich Maple Syrup, nut butter and vanilla extract to a mixing bowl and combine with a fork.
  4. Add the egg and milk or yogurt and mix again.
  5. Stir in the oats, cinnamon, baking powder and half of the chocolate chips.
  6. Transfer the mixture to the dishes and scatter over the remaining chocolate chips.
  7. Bake in the oven for 8 to 12 minutes until lightly golden and just firm to the touch.
  8. Top with sliced banana, an extra dollop of nut butter and a little more maple syrup drizzled on top before serving.
