Hearty, nourishing, and lightly sweet, these Baked Oats with Peanut Butter and Chocolate Chips make a wholesome breakfast that’s as satisfying as it is delicious.

Ingredients
- Knob butter
- 3 tbsp Pure Maple Syrup, Amber Rich, plus extra to drizzle
- 2 tbsp peanut butter (or other nut butter of your choice)
- 1 tsp vanilla extract
- 1 egg, beaten
- 5 tbsp milk or yogurt
- 75g jumbo oats
- Pinch cinnamon (optional)
- ½ tsp baking powder
- 2 tbsp dark chocolate chips
- Banana and extra nut butter to serve if you like
Instructions
- Preheat the oven to 190°C/170°C fan/Gas Mark 5.
- Butter two small oven proof dishes (or one medium sized dish) and place on a baking tray.
- Add the Amber Rich Maple Syrup, nut butter and vanilla extract to a mixing bowl and combine with a fork.
- Add the egg and milk or yogurt and mix again.
- Stir in the oats, cinnamon, baking powder and half the chocolate chips.
- Transfer the mixture to the dishes and scatter over the rest of the chocolate chips.
- Bake in the oven for 8-12 minutes until lightly golden and just firm to the touch.
- Top with some sliced banana, an extra dollop of nut butter and a little more maple syrup drizzled on top.
