Grilled Peaches with Maple Crumble and Lime Mascarpone Recipe

A simple and delicious summertime dessert of lightly caramelised peaches with a maple crumble topping, served with a tangy and sweet, creamy mascarpone cheese.
Serves 4
Ingredients

- 50g plain flour
- 25g cold butter, cut into small cubes
- 30g oats
- 3 tbsp Pure Maple Syrup, Dark Robust, plus extra for drizzling
- 4 peaches (or nectarines, or plums)
- 4 tbsp mascarpone
- 1 lime
Instructions
- Preheat the oven to 180°C/160°C fan/Gas Mark 4.
- Add the flour and butter to a bowl and rub together lightly between your fingers until it resembles breadcrumbs. Stir in the oats then 1 tbsp maple syrup.
- Tip onto a baking tray lined with foil and bake in the oven for 7-8 minutes until golden.
- Meanwhile halve and de-stone the peaches. Melt the butter in a frying pan or griddle pan and cook the peaches for a few minutes until lightly charred, slightly softened and juicy, then transfer to a serving plate.
- Zest the lime into a small bowl then squeeze in the juice from half the lime. Stir in the mascarpone and 2 tbsp maple syrup.
- Squeeze the juice from the other half lime over the cooked peaches. Sprinkle the crumble mixture over the top then serve with the lime mascarpone on the side and an extra drizzle of maple syrup.
