We love this simple Baked Salmon with Maple Herb Crust Recipe — it’s a crowd-pleaser that’s sure to delight the whole family. Light, healthy, and full of flavour, it’s perfect for a relaxed dinner or easy entertaining.
Serve with new potatoes, salad or green vegetables and extra lemon wedges.

Ingredients
- 3 tbsp Pure Maple Syrup, Dark Robust
- 1 lemon
- 2 large handfuls fresh herbs – you could use parsley, thyme, chives, rosemary, oregano or a mix of any of these
- 3 large handfuls fresh breadcrumbs
- 2 tbsp finely grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 4 large salmon or sea trout fillets
- Black pepper
- Cherry tomatoes on the vine
Instructions
- Preheat the oven to 200°C/180°C fan /Gas Mark 6.
- Line a baking tray with foil and place the salmon onto it.
- Zest the lemon into a bowl and squeeze the juice into another small bowl.
- Stir 1 tablespoon of maple syrup and a good grind of black pepper into the lemon juice then pour over the salmon to marinate while you make the topping.
- Add the herbs, breadcrumbs and parmesan to the bowl with the lemon zest. Drizzle in 2 tablespoons maple syrup and the olive oil and stir well.
- Pile the crumb topping on top of the salmon fillets, pressing it down lightly. Add a few cherry tomatoes to the tray, then cook in the oven for 15 minutes or until the salmon is just cooked through. Cook your potatoes and make your salad while the fish is cooking.
- Serve the salmon with buttery new potatoes and a fresh salad and extra lemon wedges for squeezing over.
